Taco ’bout something important.  February 24th is National Tortilla Chip Day, and if that’s not worth celebrating, I don’t know what is. These crispy triangles of joy have been the unsung heroes of our snack drawers and party spreads for generations, faithfully showing up at every game day, movie night, and impromptu snack attack.

What makes tortilla chips so special? Unlike their potato-based cousins, they’re sturdy enough to handle the heaviest of dips yet light enough to keep you reaching for “just one more.” They’re the perfect vehicle for everything from fresh pico de gallo to the yummy seven-layer dip.

These crunchy wonders are genuinely remarkable in their versatility. They can go from casual afternoon snacks to elegant party appetizers faster than you can say “salsa.”

Tonight, celebrate this auspicious holiday by making nachos. Here’s my advice: Don’t just pile everything on top. Layer those chips with toppings like you’re building the world’s most delicious lasagna. Start with a layer of chips, add your heated refried beans and cheese, then repeat. This way, every chip gets its fair share of toppings, and you avoid the dreaded “naked chip” syndrome at the bottom of the pile.

This is the perfect dish to pair with a nice frosty margarita.   Ole’

So whether you’re a purist who enjoys them straight from the bag or someone who views them as merely a cheese-delivery system, take a moment today to appreciate these crunchy wonders. After all, what would we use without tortilla chips to scoop up our guacamole? A spoon? Let’s not be ridiculous.
